- 4 large eggs
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 2 cups baby spinach
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 300°F (150°C).
- Whisk together the eggs, salt, and pepper until blended and frothy.
- Add the olive oil, cherry tomatoes, and baby spinach, and mix well.
- Stir in the mozzarella and Parmesan cheese.
- Pour the mixture into an air fryer-safe dish.
- Cook for about 15-20 minutes, or until the frittata is set and lightly golden on top.
- Remove from the air fryer, let cool slightly, slice, and serve warm.
