Description

A delicious Air Fryer Egg Frittata filled with cherry tomatoes, spinach, and cheese, perfect for breakfast or brunch.


Ingredients

  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 300°F (150°C).
  2. Whisk together the eggs, salt, and pepper until blended and frothy.
  3. Add the olive oil, cherry tomatoes, and baby spinach, and mix well.
  4. Stir in the mozzarella and Parmesan cheese.
  5. Pour the mixture into an air fryer-safe dish.
  6. Cook for about 15-20 minutes, or until the frittata is set and lightly golden on top.
  7. Remove from the air fryer, let cool slightly, slice, and serve warm.

Notes

For a variation, consider adding roasted red peppers or sautéed mushrooms.
