Instructions
- Prepare the batter: In a sizable mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and sugar until thoroughly combined.
- Mix wet ingredients: In another bowl, whisk the eggs, milk, and vanilla extract until smooth.
- Unite the mixtures: Pour the wet ingredients into the dry ingredients, mixing gently until just combined. Fold in the diced apples.
- Heat the oil: In a deep pan, heat about two inches of oil over medium heat, maintaining the oil at around 350°F (175°C).
- Fry to perfection: Drop spoonfuls of the batter into the hot oil, and fry each batch for about 3-4 minutes, flipping when golden brown.
- Drain and dust: Remove the fritters with a slotted spoon, transfer them to paper towels to drain, and dust with powdered sugar before serving.
