Description

Indulge in the decadence of Blueberry Stuffed French Toast, featuring a creamy blueberry cream cheese filling and golden-brown bread, making it a perfect breakfast treat.

Ingredients

Scale
  • 4 slices of bread (thick-cut challah or brioche)
  • 1 cup blueberries (fresh or frozen)
  • 4 oz cream cheese, softened
  • 2 eggs
  • 1/2 cup milk (whole or almond)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Butter for cooking
  • Maple syrup for serving

Instructions

  1. Prepare the filling by blending cream cheese with half of the blueberries in a mixing bowl until combined.
  2. Assemble sandwiches by spreading the cream cheese mixture onto two slices of bread and topping with the remaining slices.
  3. Whisk together eggs, milk, vanilla, and cinnamon in a shallow bowl.
  4. Dip the sandwiches in the egg mixture, allowing excess to drip off.
  5. Cook in a non-stick skillet with melted butter for 3-4 minutes on each side until golden.
  6. Serve warm, sprinkled with remaining blueberries and drizzled with maple syrup.

Notes

For best results, use day-old bread and let cream cheese reach room temperature before mixing. You can also make sandwiches ahead of time and refrigerate overnight.
