These Blueberry Greek Yogurt Bites are a delightful blend of creamy Greek yogurt and juicy blueberries, perfect for a healthy snack or dessert.

- 1½ cups (370g) plain Greek yogurt
- 1 tablespoon honey or maple syrup (or erythritol for a keto-friendly version)
- ½ teaspoon vanilla extract
- ¾ cup (100g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional)
- 1 teaspoon chia seeds (optional)
Instructions
- Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Let the mixture cook for about 5–6 minutes, stirring frequently.
- Mash lightly until you reach a jam-like consistency. Remove from heat and mix in chia seeds if desired. Allow the compote to cool completely.
- Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth and creamy.
- Taste the mixture and adjust sweetness as needed.
- Assemble the Bites: Spoon about 1 tablespoon of the yogurt mixture into each cavity of your silicone mini muffin tray. Add ½ teaspoon of blueberry compote on top and swirl gently with a toothpick.
- Freeze the tray for at least 2 hours or until firm.
- Serve & Store: Remove from molds and store in an airtight container in the freezer. Thaw slightly before serving.
