Description

Delightful cookies inspired by Boston Cream Pie, filled with whipped cream and drizzled with chocolate glaze.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Whisk together the flour, baking powder, baking soda, and salt in a bowl.
  3. Beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Scoop tablespoonfuls of the dough onto the prepared baking sheet, spacing them apart.
  7. Bake for about 10-12 minutes or until the edges are golden. Let them cool on a wire rack.
  8. Whip the heavy cream with powdered sugar until soft peaks form.
  9. Cut the cookies in half and fill with the whipped cream.
  10. Drizzle melted chocolate glaze over the filled cookies.

Notes

For best results, refrigerate the dough before baking if it feels too soft.
