Delightful cookies inspired by Boston Cream Pie, filled with whipped cream and drizzled with chocolate glaze.

- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup heavy cream
- ¼ cup powdered sugar
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl.
- Beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop tablespoonfuls of the dough onto the prepared baking sheet, spacing them apart.
- Bake for about 10-12 minutes or until the edges are golden. Let them cool on a wire rack.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Cut the cookies in half and fill with the whipped cream.
- Drizzle melted chocolate glaze over the filled cookies.
Notes
For best results, refrigerate the dough before baking if it feels too soft.
