Description

  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F. Arrange bacon slices on a wire rack placed over a baking tray, allowing the grease to drip away. Bake for about 15 minutes, or until the bacon turns deeply crisp and fragrant. Once done, let the bacon rest on paper towels and finely chop.
  2. In a shallow bowl, vigorously whisk together the eggs, whole milk, vanilla extract, and cinnamon until smooth and frothy.
  3. In a small bowl, blend the softened cream cheese with the chopped bacon until fully incorporated, ensuring a good distribution of flavors.
  4. Take each slice of brioche or challah, and with a sharp knife, create a pocket by carefully slicing into the side. Fill each pocket generously with the bacon-cream cheese mixture, pressing gently to seal.
  5. Submerge each stuffed slice into your prepared custard, coating all sides evenly.
  6. Heat the unsalted butter in a non-stick skillet over medium heat. Place the stuffed slices in the skillet and cook for approximately 3 to 4 minutes on each side until they are golden brown and cooked through.
