Description

A delightful one-pot Cajun Chicken Alfredo Orzo that combines spicy Cajun flavors with creamy Alfredo sauce for a comforting dinner in just 30 minutes.


Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup bell pepper, diced (optional)
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat the oil in a large pot over medium heat until shimmering.
  2. Add the diced chicken, seasoning with Cajun seasoning, salt, and pepper. Sauté for 5-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same pot, add onions and garlic. Cook for 2-3 minutes until fragrant. If desired, add bell pepper and sauté.
  4. Stir in the orzo pasta, chicken broth, and heavy cream. Bring to a gentle boil.
  5. Reduce the heat, cover, and simmer for 10-12 minutes until the orzo is al dente, stirring occasionally.
  6. Add the chicken back to the pot along with the Parmesan cheese. Stir until creamy and well combined. Adjust seasoning if necessary.
  7. Serve the warm orzo mixture in bowls and garnish with fresh parsley if desired.

Notes

For a vegetarian version, substitute chicken with diced tofu or chickpeas and use vegetable broth instead of chicken broth.
