Description

A hearty casserole featuring seasoned ground beef, colorful peppers, and a creamy layer of cheese, all topped with a flaky biscuit crust.


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix (like Bisquick)
  • 1 cup Water
  • Cooking Spray (like Pam)
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded (divided)
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat your oven to 350℉.
  2. Heat a large skillet over medium-high heat. Add the lean ground beef, cooking until browned (about 7–10 minutes) and drain any excess fat.
  3. In a mixing bowl, combine the biscuit mix and water into a smooth dough. Press the dough into a greased casserole dish and bake for 5-8 minutes until lightly golden.
  4. Add chopped yellow onion and red bell pepper to the skillet with cooked ground beef. Cook for about 4 minutes.
  5. Sprinkle taco seasoning over the beef and mix thoroughly.
  6. Spread the beef mixture over the baked biscuit layer.
  7. In a separate bowl, mix together sour cream, mayonnaise, drained green chiles, ¾ cup cheddar cheese, and garlic powder until smooth, then spread over the beef layer.
  8. Add dollops of salsa on top without spreading too much, then sprinkle remaining cheese over the top.
  9. Bake uncovered for 30 minutes or until hot and bubbly.

Notes

For a spicier kick, add jalapeños. For a vegetarian option, replace beef with black beans.
