- 4 chicken breasts
- 1 cup mushrooms, chopped (cremini or button)
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Melt the butter in a skillet over medium heat. Add the minced garlic and sauté until aromatic.
- Add the chopped mushrooms and cook until tender and golden.
- Stir in the mozzarella and Parmesan cheese until melted and blended.
- Cut pockets into each chicken breast and season with salt and pepper.
- Spoon the mushroom-cheese mixture into each chicken pocket.
- Heat olive oil in the skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden.
- Transfer the skillet to the oven and bake for 20-25 minutes until cooked through (165°F / 75°C).
- Rest the chicken for a few minutes before slicing.
Notes
Make-ahead tips: Prepare mushroom filling a day in advance and store in the fridge. Avoid overstuffing the chicken to prevent leaks during cooking.
