Description

A comforting and elegant dish featuring chicken breasts stuffed with creamy cheese, sautéed mushrooms, and fragrant garlic, delivering a symphony of flavors in every bite.


Ingredients

  • 4 chicken breasts
  • 1 cup mushrooms, chopped (cremini or button)
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt the butter in a skillet over medium heat. Add the minced garlic and sauté until aromatic.
  3. Add the chopped mushrooms and cook until tender and golden.
  4. Stir in the mozzarella and Parmesan cheese until melted and blended.
  5. Cut pockets into each chicken breast and season with salt and pepper.
  6. Spoon the mushroom-cheese mixture into each chicken pocket.
  7. Heat olive oil in the skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden.
  8. Transfer the skillet to the oven and bake for 20-25 minutes until cooked through (165°F / 75°C).
  9. Rest the chicken for a few minutes before slicing.

Notes

Make-ahead tips: Prepare mushroom filling a day in advance and store in the fridge. Avoid overstuffing the chicken to prevent leaks during cooking.
