Ingredients

- 2 pounds potatoes (Russets or Yukon Golds)
- 1 cup shredded cheddar cheese
- 2 eggs
- 1 cup breadcrumbs
- Salt, to taste
- Pepper, to taste
- 1 teaspoon garlic powder
- Fresh herbs, chopped (optional)
- Oil for frying
Instructions
- Boil the potatoes: Peel and cut them into chunks, place in a pot with cold water, and boil until fork-tender (15-20 minutes). Drain and return to the pot.
- Mash until smooth: Use a potato masher or ricer to achieve a velvety consistency. Allow to cool slightly.
- Mix in the goodness: Stir in shredded cheese, eggs, and seasonings until fully combined.
- Shape the balls: Scoop and roll portions of the potato mixture into golf ball-sized balls.
- Coat with breadcrumbs: Roll each ball in breadcrumbs until well-coated.
- Fry or bake: Fry in heated oil for 4-5 minutes or place on a baking sheet and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
- Serve and delight: Let cool slightly before enjoying with dipping sauces or on their own!
Notes
For make-ahead prep, store the potato mixture in the fridge and scoop/coat balls just before cooking. Air frying is also a lighter option.
