Description

Delicious crispy bites filled with buttery mashed potatoes and melted cheese that bring comfort and joy to any meal.


Ingredients

Scale
  • 2 pounds potatoes (Russets or Yukon Golds)
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1 cup breadcrumbs
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon garlic powder
  • Fresh herbs, chopped (optional)
  • Oil for frying

Instructions

  1. Boil the potatoes: Peel and cut them into chunks, place in a pot with cold water, and boil until fork-tender (15-20 minutes). Drain and return to the pot.
  2. Mash until smooth: Use a potato masher or ricer to achieve a velvety consistency. Allow to cool slightly.
  3. Mix in the goodness: Stir in shredded cheese, eggs, and seasonings until fully combined.
  4. Shape the balls: Scoop and roll portions of the potato mixture into golf ball-sized balls.
  5. Coat with breadcrumbs: Roll each ball in breadcrumbs until well-coated.
  6. Fry or bake: Fry in heated oil for 4-5 minutes or place on a baking sheet and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
  7. Serve and delight: Let cool slightly before enjoying with dipping sauces or on their own!

Notes

For make-ahead prep, store the potato mixture in the fridge and scoop/coat balls just before cooking. Air frying is also a lighter option.
