Description

A vibrant and wholesome chicken bowl featuring grilled chicken, street corn, fresh bell peppers, and creamy avocado, topped with zesty lime and cilantro.


Ingredients

  • 1 lb cooked chicken breast (diced)
  • 1 cup street corn
  • 1 cup bell peppers (diced)
  • 1/2 cup red onion (diced)
  • 1 avocado (sliced)
  • 2 tbsp lime juice
  • 1/4 cup cilantro (chopped)
  • Salt and pepper to taste
  • Rice or quinoa (optional for base)

Instructions

  1. In a large mixing bowl, toss together the diced cooked chicken, street corn, bell peppers, red onion, and sliced avocado.
  2. Drizzle fresh lime juice over the mixture and season with salt and pepper.
  3. Gently fold the ingredients together, being careful not to mash the avocado.
  4. Serve the mixture over a bed of fluffy rice or quinoa.
  5. Sprinkle chopped cilantro on top just before serving.

Notes
