- 2 lbs chicken thighs
- 4 cloves garlic, minced
- 1/4 cup yogurt
- 1/4 cup olive oil
- 1 tbsp ground cumin
- 1 tbsp ground coriander
- 1 tsp paprika
- 1 tsp turmeric
- Salt and pepper to taste
- Pita bread or flatbreads
- Fresh vegetables (lettuce, tomatoes, cucumbers)
- Garlic sauce (mayonnaise, garlic, lemon juice)
Instructions
- In a large bowl, whisk together the yogurt, minced garlic, olive oil, ground cumin, ground coriander, paprika, turmeric, salt, and pepper until well combined.
- Add the chicken thighs to the marinade, ensuring each piece is generously coated. Cover and refrigerate for at least 1 hour (overnight is best).
- Preheat your grill or skillet over medium-high heat.
- Remove the chicken from the marinade, shaking off any excess, and lay it onto the grill or skillet.
- Cook for 5–7 minutes on each side until fully cooked and nicely charred.
- Transfer the chicken to a cutting board and let it rest for a few minutes, then slice into strips.
- Serve in warm pita bread or flatbreads with fresh vegetables and a drizzle of garlic sauce.
Notes
Marinate the chicken the day before for deeper flavor. You can also use an air fryer or bake if preferred.
