Description

Savor the vibrant flavors of marinated chicken shawarma, served in warm pita bread with fresh vegetables and a creamy garlic sauce.


Ingredients

  • 2 lbs chicken thighs
  • 4 cloves garlic, minced
  • 1/4 cup yogurt
  • 1/4 cup olive oil
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp paprika
  • 1 tsp turmeric
  • Salt and pepper to taste
  • Pita bread or flatbreads
  • Fresh vegetables (lettuce, tomatoes, cucumbers)
  • Garlic sauce (mayonnaise, garlic, lemon juice)

Instructions

  1. In a large bowl, whisk together the yogurt, minced garlic, olive oil, ground cumin, ground coriander, paprika, turmeric, salt, and pepper until well combined.
  2. Add the chicken thighs to the marinade, ensuring each piece is generously coated. Cover and refrigerate for at least 1 hour (overnight is best).
  3. Preheat your grill or skillet over medium-high heat.
  4. Remove the chicken from the marinade, shaking off any excess, and lay it onto the grill or skillet.
  5. Cook for 5–7 minutes on each side until fully cooked and nicely charred.
  6. Transfer the chicken to a cutting board and let it rest for a few minutes, then slice into strips.
  7. Serve in warm pita bread or flatbreads with fresh vegetables and a drizzle of garlic sauce.

Notes

Marinate the chicken the day before for deeper flavor. You can also use an air fryer or bake if preferred.
