Description

A delicious dish featuring tender chicken thighs baked in a sweet and spicy chipotle honey glaze, served with creamy smoked Gouda mashed potatoes.

Ingredients

Scale
  • 4 chicken thighs, bone-in or boneless
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 ounces smoked Gouda cheese, shredded
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the chipotle sauce with honey in a bowl until smooth.
  3. Season the chicken thighs generously with salt and pepper and brush with honey-chipotle mixture.
  4. Place the chicken in a baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  5. Meanwhile, boil the cubed potatoes in salted water until fork-tender, about 15 minutes.
  6. Drain the potatoes and add to a mixing bowl.
  7. Add milk, butter, and smoked Gouda to the potatoes and mash until creamy.
  8. Serve the chicken thighs alongside the mashed potatoes.

Notes

Marinate the chicken thighs for extra flavor. You can use an air fryer to save time on cooking if desired.
