A delicious dish featuring tender chicken thighs baked in a sweet and spicy chipotle honey glaze, served with creamy smoked Gouda mashed potatoes.

- 4 chicken thighs, bone-in or boneless
- 2 tablespoons chipotle sauce
- 2 tablespoons honey
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 ounces smoked Gouda cheese, shredded
- 2 tablespoons butter
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the chipotle sauce with honey in a bowl until smooth.
- Season the chicken thighs generously with salt and pepper and brush with honey-chipotle mixture.
- Place the chicken in a baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
- Meanwhile, boil the cubed potatoes in salted water until fork-tender, about 15 minutes.
- Drain the potatoes and add to a mixing bowl.
- Add milk, butter, and smoked Gouda to the potatoes and mash until creamy.
- Serve the chicken thighs alongside the mashed potatoes.
Notes
Marinate the chicken thighs for extra flavor. You can use an air fryer to save time on cooking if desired.
