A delightful dish featuring tender chicken thighs marinated in a spicy-sweet chipotle honey sauce, paired with creamy smoked gouda mashed potatoes.

- 6 Chicken Thighs (bone-in, skin-on)
- 2 Chipotle Peppers in Adobo Sauce
- 3 tbsp Honey
- 3 cloves Garlic (minced)
- 1 cup Smoked Gouda Cheese (shredded)
- 2 lbs Potatoes (Russets or Yukon Gold)
- 4 tbsp Butter
- 1/2 cup Heavy Cream
- Salt and Pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine chipotle peppers, honey, minced garlic, salt, and pepper.
- Coat the chicken thighs in the chipotle mixture and place them in a baking dish.
- Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- While the chicken is baking, peel and chop the potatoes and boil them in salted water until fork-tender (about 15-20 minutes).
- Drain the potatoes, return to pot, and mix in butter and heavy cream, then mash until smooth.
- Fold in the smoked gouda and season with salt and pepper.
- Serve the chicken with the creamy gouda mashed potatoes, garnished with fresh herbs if desired.
Notes
For make-ahead, marinate chicken up to 12 hours in advance. For a quicker meal, use an air fryer at 375°F for 20-25 minutes.
