Description

A delightful dish featuring tender chicken thighs marinated in a spicy-sweet chipotle honey sauce, paired with creamy smoked gouda mashed potatoes.


Ingredients

  • 6 Chicken Thighs (bone-in, skin-on)
  • 2 Chipotle Peppers in Adobo Sauce
  • 3 tbsp Honey
  • 3 cloves Garlic (minced)
  • 1 cup Smoked Gouda Cheese (shredded)
  • 2 lbs Potatoes (Russets or Yukon Gold)
  • 4 tbsp Butter
  • 1/2 cup Heavy Cream
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine chipotle peppers, honey, minced garlic, salt, and pepper.
  3. Coat the chicken thighs in the chipotle mixture and place them in a baking dish.
  4. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  5. While the chicken is baking, peel and chop the potatoes and boil them in salted water until fork-tender (about 15-20 minutes).
  6. Drain the potatoes, return to pot, and mix in butter and heavy cream, then mash until smooth.
  7. Fold in the smoked gouda and season with salt and pepper.
  8. Serve the chicken with the creamy gouda mashed potatoes, garnished with fresh herbs if desired.

Notes

For make-ahead, marinate chicken up to 12 hours in advance. For a quicker meal, use an air fryer at 375°F for 20-25 minutes.
