- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh strawberries, pureed
- 1/4 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine the graham cracker crumbs and melted butter in a mixing bowl.
- Press the mixture firmly into the bottom of the springform pan.
- Blend cream cheese and sugar together until smooth, about 2-3 minutes.
- Add the vanilla extract and incorporate eggs one at a time.
- Fold in the strawberry puree gently to create a marbled effect.
- Pour half of the cheesecake batter over the crust and drizzle with the remaining batter, swirling together.
- Bake for 55-60 minutes until edges are set and center is slightly jiggly.
- Cool in the pan for about an hour, then refrigerate for at least 4 hours.
- Heat heavy cream and pour over chocolate; stir until smooth for the ganache.
- Pour the ganache over the chilled cheesecake and serve.
Notes
For a gluten-free option, use gluten-free graham crackers. Feel free to adjust the fruit flavors based on personal preference.
