- ½ teaspoon vanilla extract (for glaze)
- Pinch of salt (for glaze)
Instructions
- Prepare the Cinnamon Swirl: In a small bowl, mix together softened butter, brown sugar, and ground cinnamon until they form a smooth paste. Set this aside.
- Make the Pancake Batter: In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, and sugar. In another bowl, combine buttermilk, egg, melted butter, and vanilla extract. Gently pour the wet ingredients into the dry mixture and fold until just combined. Let the batter rest for about 5-10 minutes.
- Preheat Your Griddle: Heat the griddle over medium heat and grease lightly with cooking spray or butter.
- Cook the Pancakes: Pour about ½ cup of batter onto the griddle and immediately drizzle a line of cinnamon swirl mixture on top. Cook until bubbles form, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown.
- Prepare the Cream Cheese Glaze: In a bowl, whip together softened cream cheese and butter until smooth. Gradually add powdered sugar, then mix in milk, vanilla extract, and salt until desired consistency is reached.
- Serve and Enjoy: Stack pancakes on a plate and drizzle with cream cheese glaze.
Notes
Make the cinnamon swirl ahead of time and store in the refrigerator for up to a week. Batter can be stored in the fridge for up to 2 days.
