Description

A luxurious salmon dish with rich flavors of garlic and cream, paired with fresh spinach for a delightful meal.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a non-stick skillet, heat a splash of olive oil over medium-high heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Sear for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  2. Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  3. Toss in the fresh spinach and cook for 2-3 minutes until wilted.
  4. Pour in the heavy cream, add the Parmesan cheese and lemon juice, and stir to combine. Let it simmer for 3-4 minutes until slightly thickened.
  5. Return the salmon to the skillet, spooning the sauce over the fillets, and let it meld for another minute.
  6. Serve immediately, garnished with extra Parmesan if desired.

Notes

Make-ahead by sautéing spinach and preparing the cream sauce in advance. Store in the fridge and reheat when ready to serve.
