- 4 salmon fillets
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Olive oil
Instructions
- In a non-stick skillet, heat a splash of olive oil over medium-high heat. Season the salmon fillets with salt and pepper, then place them skin-side down in the skillet. Sear for 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
- Toss in the fresh spinach and cook for 2-3 minutes until wilted.
- Pour in the heavy cream, add the Parmesan cheese and lemon juice, and stir to combine. Let it simmer for 3-4 minutes until slightly thickened.
- Return the salmon to the skillet, spooning the sauce over the fillets, and let it meld for another minute.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
Make-ahead by sautéing spinach and preparing the cream sauce in advance. Store in the fridge and reheat when ready to serve.
