Description

  • 14 ounces chicken fillets
  • 4 garlic cloves (minced)
  • 1 shallot (finely chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp crushed red pepper flakes
  • 1 tsp dried oregano
  • 1 tsp dried sage
  • 1 tsp sweet paprika
  • ¼ cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp sambal oelek
  • 5.5 ounces cherry tomatoes
  • 1 ¾ cups puréed tomatoes
  • ½ cup cream (20% fat)
  • 2 ounces grated Parmesan
  • 2 tbsp chopped parsley

Instructions

  1. Cook the Penne: Fill a large pot with generously salted water and bring it to a rolling boil. Add the penne and cook until al dente. Reserve ¼ cup of the pasta water, then drain the penne and set aside.
  2. Sauté the Chicken: Heat olive oil in a large non-stick skillet over medium-high heat. Add the bite-sized chicken fillets, cooking until they begin to brown, about 5 minutes.
  3. Add Aromatics: Stir in the chopped shallot and minced garlic, sautéing for 2 minutes until fragrant and softened.
  4. Season It Up: Sprinkle in the salt, black pepper, crushed red pepper flakes, oregano, sage, and paprika. Stir continuously for about 30 seconds.
  5. Deglaze: Pour in the chicken broth and scrape the bottom with a wooden spoon to collect the browned bits stuck to the pan.
  6. Incorporate Tomato: Stir in the tomato paste and sambal oelek and let them cook for about a minute.
  7. Add Fresh Ingredients: Toss in the cherry tomatoes and puréed tomatoes, bringing the mixture to a boil. Allow it to simmer for about 5 minutes.
  8. Finish the Sauce: Stir in the cream, grated Parmesan, and chopped parsley, simmering for an additional minute.
  9. Combine and Serve: Add the cooked penne back into the skillet, tossing to coat every piece of pasta in the sauce.

Notes
