- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 cup fresh strawberries, sliced
Instructions
- Combine the flour, eggs, milk, melted butter, sugar, and vanilla extract in a mixing bowl. Whisk until smooth and let the batter rest for 15 minutes.
- Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook until golden brown and flip to cook the other side for one minute. Repeat with the remaining batter.
- Whip the heavy cream in a separate bowl until soft peaks form. Gradually add the powdered sugar and continue whipping until fluffy.
- Assemble each crepe by spreading whipped cream in the center and topping with sliced strawberries. Fold to create a pocket and serve topped with extra strawberries and whipped cream.
Notes
For best results, let the crepe batter rest for at least 15 minutes. You can also make the batter a day in advance.
