- 1 cup Almond Flour
- 1/4 cup Erythritol
- 2 tsp Cinnamon
- 1 tsp Vanilla Extract (optional)
- 1 cup Shredded Mozzarella Cheese, melted
- 1 large Egg (for egg wash)
Instructions
- Preheat your oven to 350°F (175°C) or your air fryer to 325°F (160°C).
- In a large microwave-safe bowl, combine the cream cheese and shredded mozzarella. Microwave for 30-second intervals until fully melted, stirring in between.
- Mix in almond flour, erythritol, cinnamon, vanilla extract, and egg until a dough forms.
- Roll out the dough between two sheets of parchment paper to 1/4 inch thick.
- Cut rolled dough into rectangles (about 3×4 inches).
- Prepare filling by mixing additional cinnamon and sweetener; spread this mixture over each rectangle.
- Roll rectangles tightly to create spiral shapes.
- Place roll-ups on a lined baking sheet or in the air fryer, brushing with egg wash.
- Bake for 15-20 minutes (or air fry for 8-10 minutes) until crispy and golden.
- Cool slightly before serving, enjoy warm with a sprinkle of cinnamon.
