Description

Deliciously moist cupcakes featuring vibrant berries and crunchy nuts, perfect for any celebration.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup fresh berries (blueberries, raspberries, or strawberries)
  • ½ cup chopped nuts (almonds, walnuts, or pecans)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your cupcake pan by lining it with paper liners.
  3. Mix the flour, baking powder, and salt in a large mixing bowl.
  4. Cream the butter and sugar together until light and fluffy.
  5. Add the eggs and vanilla extract, mixing until well incorporated.
  6. Combine the wet and dry ingredients, alternating with the milk.
  7. Fold in the berries and nuts gently.
  8. Fill the cupcake liners about 2/3 full with batter.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
