- 4 cups Chicken Broth
- 2 pieces Boneless, Skinless Chicken Breasts

- 2 cloves Minced Garlic
- 1 cup Grated Cucumber
- 2 tablespoons Dill
- 2 tablespoons Lemon Juice
- 1 teaspoon Oregano
- 1 teaspoon Paprika
- 1 cup Cucumber Substitute (Diced zucchini or bell pepper)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the rice by combining it with chicken broth in a baking dish.
- Season the chicken breasts with olive oil, salt, and pepper.
- Arrange the chicken on top of the rice mixture.
- Bake covered for about 35 minutes.
- Prepare the tzatziki by mixing Greek yogurt, garlic, grated cucumber, dill, lemon juice, oregano, and paprika.
- Uncover and bake for an additional 10-15 minutes.
- Combine the dish and serve the chicken on rice, drizzled with tzatziki.
Notes
