Description

A comforting weeknight dinner of tender chicken and fluffy rice, enhanced with a creamy tzatziki sauce, bringing Greek flavors to your table.


Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 2 pieces Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute (Diced zucchini or bell pepper)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the rice by combining it with chicken broth in a baking dish.
  3. Season the chicken breasts with olive oil, salt, and pepper.
  4. Arrange the chicken on top of the rice mixture.
  5. Bake covered for about 35 minutes.
  6. Prepare the tzatziki by mixing Greek yogurt, garlic, grated cucumber, dill, lemon juice, oregano, and paprika.
  7. Uncover and bake for an additional 10-15 minutes.
  8. Combine the dish and serve the chicken on rice, drizzled with tzatziki.

Notes

Make-ahead by assembling and refrigerating for up to 24 hours. Use fresh herbs for the best flavor.
