- 2 lbs Potatoes (Yukon Gold or Russets)
- 1/4 cup Olive Oil
- 4 cloves Garlic, minced
- 1/4 cup Lemon Juice, freshly squeezed
- 2 tsp Dried Oregano
- 1 tsp Salt
- 1/2 tsp Black Pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly and cut them into wedges.
- In a large bowl, toss the potato wedges with olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
- Arrange the potato wedges in a single layer on a baking sheet.
- Roast them in the oven for 45-50 minutes, turning halfway through for even browning.
- Remove from the oven and serve warm.
Notes
For a kick, add crushed red pepper flakes. For a cheesy touch, sprinkle Parmesan cheese during the last five minutes of roasting.
