Description

These Garlic Crispy Greek Lemon Potatoes are a celebration of flavor and texture, featuring crispy edges and soft, fluffy centers, enhanced with garlic and lemon.


Ingredients

  • 2 lbs Potatoes (Yukon Gold or Russets)
  • 1/4 cup Olive Oil
  • 4 cloves Garlic, minced
  • 1/4 cup Lemon Juice, freshly squeezed
  • 2 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and cut them into wedges.
  3. In a large bowl, toss the potato wedges with olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
  4. Arrange the potato wedges in a single layer on a baking sheet.
  5. Roast them in the oven for 45-50 minutes, turning halfway through for even browning.
  6. Remove from the oven and serve warm.

Notes

For a kick, add crushed red pepper flakes. For a cheesy touch, sprinkle Parmesan cheese during the last five minutes of roasting.
