Description

A delightful side dish featuring vibrant green beans sautéed with toasted almonds and fresh lemon for a refreshing crunch.

Ingredients

Scale
  • 1 lb fresh green beans
  • 1/4 cup sliced almonds
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste

Instructions

  1. Prepare the green beans: Trim the ends off the green beans.
  2. Blanch the beans: Bring salted water to a boil, add green beans, and cook for 3-4 minutes.
  3. Ice bath: Drain the beans and plunge them into a bowl of ice water.
  4. Sauté the nuts: In a skillet, melt butter and olive oil. Add sliced almonds and stir until golden brown, about 2 minutes.
  5. Combine and enhance: Add the blanched green beans, lemon zest, and lemon juice to the skillet and toss gently.
  6. Season and serve: Sprinkle with salt and pepper, cook for an additional 2 minutes, and serve warm.

Notes

Make-ahead tips: You can blanch the green beans a day in advance. Avoid overcooking beans to maintain crispness.
