Ingredients

- Zucchini
- Portobello mushrooms
- Avocado

Instructions
- Prep the vegetables: Wash and slice the bell peppers, zucchini, and portobello mushrooms into even pieces.
- Season and grill: Toss cut veggies with olive oil, salt, pepper, and herbs. Grill on medium-high heat for 5-7 minutes on each side until tender.
- Mash the avocado: In a bowl, mash the avocados with salt, pepper, and a squeeze of lemon.
- Assemble the sandwich: Toast the bread, spread avocado mash on each slice, layer grilled veggies, top with herbs, and close the sandwich.
- Press and cut: Gently press down and slice the sandwich in half to serve.
