Description

Delight in the whimsical flavors of homemade Sour Patch Kids, combining a soft, chewy texture with a tantalizing sour kick that transforms into sweet fruitiness.


Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon citric acid
  • 4 tablespoons fresh squeezed lemon or lime juice
  • 3 tablespoons pectin
  • 5 tablespoons granulated sugar
  • 1 tablespoon unflavored vegan gelatin
  • Fresh fruit juice of your choice

Instructions

  1. Bloom your gelatin: In a small bowl, combine the unflavored vegan gelatin with 2 tablespoons of water. Allow it to sit for 5 minutes until it’s fully absorbed and gel-like.
  2. Heat the fruit juice and sugar: In a saucepan over medium-low heat, combine your chosen fresh fruit juice with 5 tablespoons of granulated sugar. Stir it gently until the mixture begins to simmer.
  3. Combine with pectin: Sprinkle in the pectin, stirring well until completely combined. Raise the heat and allow the mixture to come to a gentle boil.
  4. Add the bloomed gelatin: Stir in the bloomed gelatin until it fully dissolves.
  5. Cook until thickened: Continue cooking until the mixture slightly thickens, stirring continuously to avoid burning.
  6. Fill the molds: Using a syringe or dropper, carefully fill your chosen candy molds with the mixture.
  7. Refrigerate: Place your filled molds in the fridge for 2–3 hours, allowing the candies to set.
  8. Unmold: Once set, carefully remove the candies from the molds and place them in the fridge uncovered overnight.
  9. Coat in sugar: In a small bowl, mix the remaining granulated sugar with citric acid and roll your candies in this mixture before serving.

Notes

Store candies in an airtight container in the fridge for up to a week. For longer storage, freeze them for up to three months.
