- 1 lb chicken breasts (boneless, skinless)
- 1/4 cup honey
- 2 limes (juiced)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper (to taste)
- 1 cup rice (uncooked)
- 1 avocado (diced)
- 1/2 cup cilantro (chopped)
- 1/4 cup sour cream
Instructions
- Whisk together honey, lime juice, chili powder, cumin, salt, and pepper in a mixing bowl.
- Coat the chicken breasts in the marinade and let marinate for at least 30 minutes in the refrigerator.
- Prepare the rice according to package directions and set aside to cool slightly.
- Heat the grill or skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until golden brown.
- Rest the chicken for a few minutes before slicing.
- Combine the cooked rice, diced avocado, chopped cilantro, and sour cream in a large bowl and fold together.
- Assemble the dish by spooning avocado rice on plates and layering sliced chicken on top, finish with a drizzle of lime juice.
