Description

A delightful Honey Lime Chicken marinated in a sweet-tangy glaze, paired with creamy avocado rice for a burst of flavor.


Ingredients

  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. Whisk together honey, lime juice, chili powder, cumin, salt, and pepper in a mixing bowl.
  2. Coat the chicken breasts in the marinade and let marinate for at least 30 minutes in the refrigerator.
  3. Prepare the rice according to package directions and set aside to cool slightly.
  4. Heat the grill or skillet over medium heat and cook the marinated chicken for 6-7 minutes on each side until golden brown.
  5. Rest the chicken for a few minutes before slicing.
  6. Combine the cooked rice, diced avocado, chopped cilantro, and sour cream in a large bowl and fold together.
  7. Assemble the dish by spooning avocado rice on plates and layering sliced chicken on top, finish with a drizzle of lime juice.

Notes

For more intense flavor, let the chicken marinate overnight. Adjust the spices according to your preference.
