Description

Ingredients

  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach, chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 cloves of garlic, minced
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Cook the pasta: Boil a large pot of salted water, adding your pasta. Cook according to package instructions until al dente. Drain and set aside, reserving a splash of pasta water.
  2. Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant—around 1 minute.
  3. Get vegetables cozy: Toss in the halved cherry tomatoes and chopped spinach. Sauté until the spinach wilts and the tomatoes soften, roughly 2-3 minutes.
  4. Combine the flavors: Gently fold in the cooked pasta. If your dish seems dry, add a splash of reserved pasta water.
