- 1 cup All-Purpose Flour
- 1/2 cup Cocoa Powder
- 1 tbsp Baking Powder
- 3/4 cup Granulated Sugar
- 2 large Eggs
- 1/2 cup Milk
- 1/3 cup Vegetable Oil
- 1 cup Espresso
- 1 cup Mascarpone Cheese
- 2 tbsp Cocoa Powder (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the flour, cocoa powder, baking powder, and granulated sugar in a mixing bowl.
- Whisk the eggs, milk, and vegetable oil until well blended.
- Add the espresso to the wet mixture and mix until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Spoon the batter into cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Whip the mascarpone cheese until smooth and fold in cocoa powder.
- Frost the cooled cupcakes with mascarpone frosting and dust with cocoa powder.
Notes
Make sure all ingredients are at room temperature for better mixing. Allow cupcakes to cool completely before frosting.
