Colorful and whimsical Jello Sugar Cookies that bring joy and nostalgia to any gathering.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 3–4 flavors of Jello gelatin powder (e.g., strawberry, lime, grape)
- Additional sugar for rolling
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the butter and sugar together in a large bowl using an electric mixer until fluffy (about 2-3 minutes).
- Add the egg and mix until combined.
- Mix the flour, baking powder, and salt in another bowl.
- Combine the dry ingredients into the butter mixture and blend until a soft dough forms.
- Divide the dough into 3-4 portions; add 1-2 tablespoons of different Jello flavors to each and mix.
- Chill the dough in the refrigerator for 15-20 minutes.
- Shape the dough into balls, roll in additional sugar, flatten slightly, and place on baking sheets.
- Bake for 8-10 minutes, until edges are set and tops are crackled.
- Cool on the baking sheet for 2 minutes before transferring to a wire rack.
Notes
For best results, chill the dough before shaping and consider using different Jello flavors for variety.
