- 2 tablespoons jerk seasoning

- 2 cups fresh pineapple, diced

- ½ cup fresh cilantro, chopped
- 2 tablespoons lime juice
- 3 cups cooked white rice
- ¼ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Marinate the chicken by rubbing with olive oil and jerk seasoning, then chill for at least 30 minutes.
- Prepare the grill or skillet by preheating it over medium-high heat.
- Cook the chicken for 6-8 minutes on each side until the internal temperature reaches 165°F, then let rest.
- Mix together the pineapple, bell pepper, red onion, cilantro, lime juice, and a pinch of salt in a bowl.
