Description

A vibrant dish pairing spicy jerk chicken with refreshing mango slaw and a creamy honey lime drizzle.


Ingredients

  • Chicken thighs or breasts
  • Jerk seasoning
  • Mango
  • Cabbage (green and purple)
  • Carrots
  • Red onion
  • Honey
  • Lime juice
  • Sour cream or Greek yogurt
  • Cilantro
  • Salt and pepper
  • Olive oil

Instructions

  1. Marinate the chicken: In a mixing bowl, coat the chicken with jerk seasoning and allow it to marinate in the refrigerator for at least 30 minutes.
  2. Cook the chicken: Heat a grill or skillet over medium-high heat. Add olive oil and cook the chicken for about 7-8 minutes on each side or until fully cooked.
  3. Prepare the slaw: In a bowl, combine shredded cabbage, sliced carrots, diced mango, and sliced red onion. Toss gently.
  4. Make the honey lime cream: Whisk together honey, lime juice, and sour cream or Greek yogurt until smooth.
  5. Assemble the bowls: Place slaw in each bowl, top with jerk chicken slices and drizzle with honey lime cream.
  6. Garnish with chopped cilantro and season with salt and pepper to taste.

Notes

For a deeper flavor, marinate chicken overnight. Adjust the heat level of the jerk seasoning to your preference.
