- 8 oz fresh mozzarella cheese, cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar

- Black pepper, to taste
Instructions
- Wash the cucumbers and cherry tomatoes thoroughly. Slice the cucumbers into rounds or half-moons and halve the cherry tomatoes.
- In a large mixing bowl, gently toss together the sliced cucumbers, fresh mozzarella cheese, halved cherry tomatoes, and basil leaves.
- Drizzle with olive oil and balsamic vinegar, starting with about 2 tablespoons each, adding more to taste.
- Season with salt and pepper liberally.
- Gently toss the salad to combine, ensuring everything is evenly coated without crushing the ingredients.
- Serve immediately or let it sit in the fridge for 15-30 minutes to allow flavors to meld.
