Description

A refreshing salad combining crisp cucumbers, creamy mozzarella, and vibrant cherry tomatoes, perfect for summer occasions.


Ingredients

  • 2 English cucumbers, sliced
  • 8 oz fresh mozzarella cheese, cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Wash the cucumbers and cherry tomatoes thoroughly. Slice the cucumbers into rounds or half-moons and halve the cherry tomatoes.
  2. In a large mixing bowl, gently toss together the sliced cucumbers, fresh mozzarella cheese, halved cherry tomatoes, and basil leaves.
  3. Drizzle with olive oil and balsamic vinegar, starting with about 2 tablespoons each, adding more to taste.
  4. Season with salt and pepper liberally.
  5. Gently toss the salad to combine, ensuring everything is evenly coated without crushing the ingredients.
  6. Serve immediately or let it sit in the fridge for 15-30 minutes to allow flavors to meld.

Notes

Best served fresh, but can be prepared ahead by mixing cucumbers and tomatoes; add mozzarella and dressing just before serving.
