Description

This vibrant street corn pasta salad bursts with flavors of fresh corn, creamy avocado, and zesty lime for a perfect summer dish.


Ingredients

  • 8 oz Pasta (your choice)
  • 2 cups Corn (fresh or frozen)
  • 1 Red Bell Pepper, diced
  • 1/4 cup Red Onion, diced
  • 1/4 cup Cilantro, chopped
  • 1/2 cup Cherry Tomatoes, halved
  • 1 Avocado, diced
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Mayonnaise
  • 2 tablespoons Lime Juice
  • Salt and Pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente, then drain and rinse with cold water.
  2. In a large mixing bowl, combine the cooled pasta, corn, diced bell pepper, red onion, chopped cilantro, halved cherry tomatoes, and diced avocado. Toss gently.
  3. In a separate small bowl, whisk together mayonnaise, lime juice, salt, and pepper until smooth.
  4. Pour the dressing over the pasta and vegetables, tossing until everything is coated.
  5. Gently fold in crumbled feta cheese.
  6. Serve immediately or refrigerate for an hour to enhance flavors.

Notes

Prepare and chill up to 24 hours in advance; add avocado and feta just before serving for freshness.
