- 8 oz Pasta (your choice)
- 2 cups Corn (fresh or frozen)
- 1 Red Bell Pepper, diced
- 1/4 cup Red Onion, diced
- 1/4 cup Cilantro, chopped
- 1/2 cup Cherry Tomatoes, halved
- 1 Avocado, diced
- 1/2 cup Feta Cheese, crumbled
- 1/4 cup Mayonnaise
- 2 tablespoons Lime Juice
- Salt and Pepper to taste
Instructions
- Cook the pasta according to package instructions in salted water until al dente, then drain and rinse with cold water.
- In a large mixing bowl, combine the cooled pasta, corn, diced bell pepper, red onion, chopped cilantro, halved cherry tomatoes, and diced avocado. Toss gently.
- In a separate small bowl, whisk together mayonnaise, lime juice, salt, and pepper until smooth.
- Pour the dressing over the pasta and vegetables, tossing until everything is coated.
- Gently fold in crumbled feta cheese.
- Serve immediately or refrigerate for an hour to enhance flavors.
