Description

A comforting and creamy soup featuring smoky kielbasa and tender potatoes, perfect for chilly evenings.

Ingredients

Scale
  • 1 lb kielbasa sausage, sliced
  • 4 medium potatoes, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat a splash of oil over medium heat. Add the diced onion and minced garlic. Sauté until they turn translucent and fragrant, about 3-4 minutes.
  2. Cook the kielbasa: Toss in the sliced kielbasa sausage and cook until browned, about 5-7 minutes.
  3. Incorporate the potatoes: Add the diced potatoes to the pot, stirring them into the aromatic mixture.
  4. Add the broth: Pour in the chicken broth and bring everything to a gentle boil. Reduce heat and simmer for 15-20 minutes until the potatoes are fork-tender.
  5. Cream it up: Stir in the heavy cream, season with salt and pepper.
  6. Serve and garnish: Ladle into bowls and top with chopped parsley.

Notes

This soup tastes even better the next day. For a lighter version, substitute heavy cream with evaporated milk or a dairy-free alternative.
