Description

Succulent chicken thighs marinated in a sweet and spicy gochujang sauce, grilled to perfection for an authentic Korean taste experience.


Ingredients

  • 1 ½ lbs. chicken thighs (boneless, skinless)
  • 2 tsp fresh ginger (finely grated)
  • 2 tsp minced garlic
  • 3 tbsp low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp gochujang
  • Chopped green onions (optional garnish)

Instructions

  1. Prepare the chicken by cutting the thighs into 1 ½-inch cubes.
  2. Whisk the marinade ingredients in a small bowl.
  3. Marinate the chicken by coating it with half of the marinade and refrigerate for at least 4 hours.
  4. Preheat your grill to medium heat.
  5. Thread the marinated chicken onto skewers, spacing evenly.
  6. Grill the skewers, flipping every 3-4 minutes, until the internal temperature reaches 165°F, about 20-30 minutes.
  7. Baste the skewers with reserved marinade during the last turns, then serve hot garnished with green onions.

Notes

For enhanced flavor, marinate overnight. These skewers can also be made with chicken breast or alternative proteins like shrimp or tofu.
