A delightful fusion of Korean bulgogi flavors and classic cheesesteak, featuring tender beef, spicy kimchi, and gooey cheese.

- 1 lb beef sirloin, thinly sliced
- 1 cup kimchi, chopped
- 1 medium yellow onion, sliced
- 1 cup bell peppers (any color), sliced
- 4 slices provolone or American cheese
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons vegetable oil
- Optional: Minced garlic and a touch of sugar
Instructions
- Slice the beef and vegetables: Thinly slice the beef sirloin and the onion and bell peppers.
- Marinate the beef: In a mixing bowl, combine soy sauce, sesame oil, and any added minced garlic or sugar. Add the sliced beef, coating it thoroughly.
- Heat a tablespoon of vegetable oil in your skillet over medium-high heat and sauté the sliced onions and bell peppers until tender and slightly caramelized (about 5 minutes).
- Push the sautéed veggies to one side of the skillet. Add the marinated beef and sear slightly for about 5 minutes.
- Fold in the chopped kimchi and mix well. Cook for an additional 2 minutes to warm the kimchi through.
- Toast your hoagie rolls until golden brown. Pile the bulgogi mixture high atop the rolls, layering the cheese on top, and broil until the cheese is melted and bubbly.
Notes
For deeper flavor, marinate the beef a few hours or even overnight. Feel free to customize ingredients as per your preference.
