Ingredients

- 1 cup cottage cheese (low-fat)
- 1 cup fresh blueberries
- 1 tablespoon lemon zest (from about 1 lemon)
- 2 tablespoons honey (or maple syrup for a vegan option)
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- A pinch of salt
Instructions
- In a mixing bowl, combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Gently fold to keep blueberries intact.
- Chill the mixture in the refrigerator for 15–20 minutes to firm it up.
- Using a tablespoon or ice cream scoop, portion out the mixture and roll it into firm balls.
- Place them on a baking sheet lined with parchment paper.
- Optional: Preheat oven to 325°F (160°C) and bake for 8–10 minutes for a lightly toasted texture.
- Allow bites to cool slightly, then drizzle with honey and garnish with extra blueberries if desired.
Notes
Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
