Description

Delicious protein bites made with cottage cheese, fresh blueberries, and a hint of lemon, perfect for a healthy snack or post-workout treat.


Ingredients

  • 1 cup cottage cheese (low-fat)
  • 1 cup fresh blueberries
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Gently fold to keep blueberries intact.
  2. Chill the mixture in the refrigerator for 15–20 minutes to firm it up.
  3. Using a tablespoon or ice cream scoop, portion out the mixture and roll it into firm balls.
  4. Place them on a baking sheet lined with parchment paper.
  5. Optional: Preheat oven to 325°F (160°C) and bake for 8–10 minutes for a lightly toasted texture.
  6. Allow bites to cool slightly, then drizzle with honey and garnish with extra blueberries if desired.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
