- 1 lb chicken breast, diced
- 1 package gnocchi
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 lemon, juiced and zested
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Sauté the chicken: In a large skillet, heat olive oil over medium heat, add the diced chicken breast and cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
- Add garlic: In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
- Pour in the heavy cream, lemon juice, and lemon zest; stir and let simmer.
- Cook the gnocchi according to package instructions in boiling salted water; drain when they float to the surface.
- Fold the cooked gnocchi into the skillet with the lemon cream, add the chicken back, and stir to combine.
- Season with salt and pepper to taste; garnish with fresh parsley before serving.
Notes
You can make the chicken and sauce ahead of time, then just reheat and add fresh gnocchi when ready to serve.
