Description

Delicious tropical mango cookies with a soft bite, infused with the sweetness of ripe mangoes and the richness of brown sugar.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh mango purée or 1/2 cup dried mango bits
  • 1/2 cup shredded coconut (optional)
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) to prepare for baking.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy for about 3-4 minutes.
  3. Beat in the eggs, one at a time, fully incorporating each before adding the next.
  4. Stir in the vanilla extract.
  5. Whisk together the flour, baking soda, and salt in another bowl.
  6. Blend this dry mixture into the wet batter until just combined; avoid overmixing.
  7. Fold in the mango purée or dried mango bits, along with shredded coconut if using.
  8. Drop spoonfuls of dough onto ungreased baking sheets, spacing them out.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Cool on baking sheets a moment before transferring them to wire racks to cool completely.

Notes

You can freeze the dough and bake directly from the freezer by adding a couple of minutes to the baking time.
