- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup fresh mango purée or 1/2 cup dried mango bits
- 1/2 cup shredded coconut (optional)
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C) to prepare for baking.
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy for about 3-4 minutes.
- Beat in the eggs, one at a time, fully incorporating each before adding the next.
- Stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl.
- Blend this dry mixture into the wet batter until just combined; avoid overmixing.
- Fold in the mango purée or dried mango bits, along with shredded coconut if using.
- Drop spoonfuls of dough onto ungreased baking sheets, spacing them out.
- Bake for 10-12 minutes until edges are lightly golden.
- Cool on baking sheets a moment before transferring them to wire racks to cool completely.
Notes
You can freeze the dough and bake directly from the freezer by adding a couple of minutes to the baking time.
