Description

A vibrant and refreshing mango slaw bursting with color, flavor, and crunchy texture, perfect for summer gatherings.


Ingredients

  • 2 ripe mangoes, julienned
  • 1 cup red cabbage, shredded
  • 1 cup carrots, grated
  • 1/2 red bell pepper, sliced
  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients: Julienne the ripe mangoes, shred the red cabbage, and grate the carrots. Slice the red bell pepper and chop the green onions, then finely chop the cilantro.
  2. Mix the slaw: In a large bowl, combine mangoes, red cabbage, carrots, red bell pepper, green onions, and cilantro. Toss gently to mix.
  3. Create the dressing: In a small bowl, whisk lime juice, honey, salt, and pepper until combined.
  4. Combine and serve: Pour the dressing over the slaw mixture and toss gently to coat. Let it sit in the refrigerator for about 15 minutes before serving.

Notes

Mango slaw can be made ahead of time for deeper flavor. Substitute ripe mangoes with avocado or chopped pineapple if needed.
