- 2 tablespoons Olive Oil
- 1 teaspoon Garlic Powder
- 4 Chicken Breasts
- 3 tablespoons Maple Syrup
- 2 tablespoons Dijon Mustard
- 1 cup Quinoa or Brown Rice
- Fresh Herbs (e.g., parsley or cilantro)
Instructions
- Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
- Peel and chop the sweet potatoes into bite-sized pieces. Toss with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread on the baking sheet.
- In a mixing bowl, combine 2 tablespoons of olive oil, maple syrup, and Dijon mustard. Add the chicken breasts and let them marinate.
- Roast the sweet potatoes in the oven for 25-30 minutes, flipping halfway through.
- Cook the marinated chicken breasts in a skillet over medium-high heat for approximately 6-7 minutes on each side, or bake for 20 minutes in the oven.
- Prepare the quinoa or brown rice according to package instructions.
- Combine the cooked quinoa or rice, roasted sweet potatoes, and sliced chicken in a bowl. Garnish with fresh herbs.
Notes
For a twist, the chicken can be cooked in an air fryer. Ensure to marinate for at least 30 minutes for best flavor.
