Description

A comforting dish featuring succulent chicken breasts glazed with a maple-dijon sauce served over fluffy quinoa or brown rice, accompanied by roasted sweet potatoes.


Ingredients

  • 2 medium Sweet Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 4 Chicken Breasts
  • 3 tablespoons Maple Syrup
  • 2 tablespoons Dijon Mustard
  • 1 cup Quinoa or Brown Rice
  • Fresh Herbs (e.g., parsley or cilantro)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. Peel and chop the sweet potatoes into bite-sized pieces. Toss with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Spread on the baking sheet.
  3. In a mixing bowl, combine 2 tablespoons of olive oil, maple syrup, and Dijon mustard. Add the chicken breasts and let them marinate.
  4. Roast the sweet potatoes in the oven for 25-30 minutes, flipping halfway through.
  5. Cook the marinated chicken breasts in a skillet over medium-high heat for approximately 6-7 minutes on each side, or bake for 20 minutes in the oven.
  6. Prepare the quinoa or brown rice according to package instructions.
  7. Combine the cooked quinoa or rice, roasted sweet potatoes, and sliced chicken in a bowl. Garnish with fresh herbs.

Notes

For a twist, the chicken can be cooked in an air fryer. Ensure to marinate for at least 30 minutes for best flavor.
