Instructions
- Marinate the Chicken: In a mixing bowl, combine maple syrup and sriracha sauce. Add the chicken bites, ensuring they’re well coated. Let marinate for at least 30 minutes.
- Grill to Perfection: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken bites for approximately 6-8 minutes until cooked through and slightly charred.
- Cook the Coconut Rice: Prepare the coconut rice according to the package directions on your stovetop or rice cooker.
- Prepare the Mango Avocado Salsa: In a separate bowl, mix diced mango, avocado, red onion, chopped cilantro, salt, and pepper until fully combined.
- Make the Chili Mayo: In a small bowl, stir together mayonnaise with chili powder.
- Assemble Your Bowl: Start with a heap of fluffy coconut rice, top with grilled chicken, followed by mango avocado salsa, and drizzle with chili mayo.
