Description

A flavorful bowl combining grilled chicken with the sweetness of maple syrup and a spicy kick from sriracha, served over creamy coconut rice with a refreshing mango avocado salsa.


Ingredients

  • 1 pound chicken bites
  • 1/4 cup maple syrup
  • 2 tablespoons sriracha sauce
  • 2 cups cooked coconut rice
  • 1 ripe mango, diced
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine maple syrup and sriracha sauce. Add the chicken bites, ensuring they’re well coated. Let marinate for at least 30 minutes.
  2. Grill to Perfection: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken bites for approximately 6-8 minutes until cooked through and slightly charred.
  3. Cook the Coconut Rice: Prepare the coconut rice according to the package directions on your stovetop or rice cooker.
  4. Prepare the Mango Avocado Salsa: In a separate bowl, mix diced mango, avocado, red onion, chopped cilantro, salt, and pepper until fully combined.
  5. Make the Chili Mayo: In a small bowl, stir together mayonnaise with chili powder.
  6. Assemble Your Bowl: Start with a heap of fluffy coconut rice, top with grilled chicken, followed by mango avocado salsa, and drizzle with chili mayo.

Notes

Make ahead by marinating chicken a day before. Can substitute chicken with tofu for a vegetarian version.
