Description

A vibrant and flavorful salad featuring grilled corn, creamy dressing, and fresh herbs that captures the essence of summer.


Ingredients

  • 4 cups corn (fresh or frozen)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the corn until charred (about 10-15 minutes) if using fresh. If using frozen, cook per package instructions.
  2. Cut the kernels off the cooled corn and place in a large mixing bowl.
  3. Combine the chopped red onion, cilantro, and crumbled cotija cheese with the corn.
  4. Prepare the dressing by whisking together mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl.
  5. Mix the dressing into the corn mixture until evenly coated.
  6. Serve chilled or at room temperature.

Notes

For best flavor, chill for a few hours before serving. Hold off adding cotija cheese until just before serving.
