Description

A luxurious mocha cheesecake featuring a creamy filling with coffee and chocolate flavors, sitting atop a crunchy graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup heavy cream
  • 1/4 cup brewed coffee, cooled
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup semi-sweet chocolate chips, melted

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium-sized bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until crumbly.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
  4. In a large bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and vanilla extract, blending until combined.
  5. Incorporate eggs one at a time, mixing well after each addition.
  6. In a separate bowl, whisk sour cream, heavy cream, cooled coffee, and cocoa powder until smooth. Fold into the cream cheese mixture.
  7. Gently fold in melted chocolate chips.
  8. Pour the cheesecake batter over the cooled crust and smooth the top. Bake for 50 to 60 minutes until set but slightly jiggly.
  9. Let it cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  10. Run a knife around the edge before releasing the springform. Slice and serve.

Notes

For best flavor, prep the cheesecake a day ahead. Serve with fresh berries, whipped cream, or a drizzle of chocolate sauce.
