- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup brewed coffee, cooled
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup semi-sweet chocolate chips, melted
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium-sized bowl, combine graham cracker crumbs and sugar. Add melted butter and mix until crumbly.
- Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes.
- In a large bowl, beat softened cream cheese until smooth. Gradually add granulated sugar and vanilla extract, blending until combined.
- Incorporate eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk sour cream, heavy cream, cooled coffee, and cocoa powder until smooth. Fold into the cream cheese mixture.
- Gently fold in melted chocolate chips.
- Pour the cheesecake batter over the cooled crust and smooth the top. Bake for 50 to 60 minutes until set but slightly jiggly.
- Let it cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
- Run a knife around the edge before releasing the springform. Slice and serve.
Notes
For best flavor, prep the cheesecake a day ahead. Serve with fresh berries, whipped cream, or a drizzle of chocolate sauce.
