Description

A vibrant salad featuring ripe nectarines, creamy goat cheese, and toasted almonds, perfect for summer gatherings.


Ingredients

  • 2 ripe nectarines, sliced
  • 4 oz goat cheese, crumbled
  • 1 small red onion, thinly sliced
  • 1/2 cup toasted almonds, roughly chopped
  • 4 cups mixed greens
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Wash the mixed greens and place in a large mixing bowl.
  2. Add sliced nectarines, red onion, and toasted almonds.
  3. In a small bowl, whisk together balsamic vinegar and olive oil, adding salt and pepper to taste.
  4. Drizzle the vinaigrette over the salad and toss gently.
  5. Top with crumbled goat cheese before serving.
