Description

A delightful and refreshing salsa that enhances any dish with its vibrant colors and flavors, combining sweet nectarines with zesty lime and a kick of chili.


Ingredients

  • 23 ripe nectarines, diced (about 2 cups)
  • 1 tomato, diced (about 1 cup)
  • 1 cup cilantro, minced
  • 1/4 cup shallot, diced (or substitute with red onion)
  • 1 bird’s eye chili, seeds removed and finely diced (or substitute jalapeno)
  • 1 tablespoon fresh lime juice (plus more to taste)
  • 1 teaspoon honey or sugar

Instructions

  1. Dice the nectarines into bite-sized pieces, ensuring they are ripe but firm.
  2. Dice the tomato and shallots, and chop the cilantro finely.
  3. Carefully remove the seeds from the bird’s eye chili and finely chop it.
  4. In a large mixing bowl, combine the diced nectarines, tomatoes, minced cilantro, shallots, and diced chili.
  5. Add the fresh lime juice and honey or sugar, and stir gently until well mixed.
  6. Taste and adjust lime juice if desired.

Notes

Let the salsa rest in the refrigerator for a few hours for the flavors to marry. This salsa is best enjoyed fresh but can be stored for up to two days in an airtight container.
