Ingredients

- 2–3 ripe nectarines, diced (about 2 cups)
- 1 tomato, diced (about 1 cup)
- 1 cup cilantro, minced
- 1/4 cup shallot, diced (or substitute with red onion)
- 1 bird’s eye chili, seeds removed and finely diced (or substitute jalapeno)
- 1 tablespoon fresh lime juice (plus more to taste)
- 1 teaspoon honey or sugar
Instructions
- Dice the nectarines into bite-sized pieces, ensuring they are ripe but firm.
- Dice the tomato and shallots, and chop the cilantro finely.
- Carefully remove the seeds from the bird’s eye chili and finely chop it.
- In a large mixing bowl, combine the diced nectarines, tomatoes, minced cilantro, shallots, and diced chili.
- Add the fresh lime juice and honey or sugar, and stir gently until well mixed.
- Taste and adjust lime juice if desired.
Notes
Let the salsa rest in the refrigerator for a few hours for the flavors to marry. This salsa is best enjoyed fresh but can be stored for up to two days in an airtight container.
