- 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 4 cups chicken broth
- 8 ounces egg noodles
- ½ cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the chicken to the pan in a single layer and sauté for 6–7 minutes until golden and cooked through.
- Remove the chicken from the pan and set aside, leaving the flavorful residues.
- Reduce heat to medium and add minced garlic to the pan, sautéing for 1 minute.
- Pour in the chicken broth and bring it to a simmer.
- Add the egg noodles, stirring to combine, and cook for 8–10 minutes until al dente.
- Stir in the heavy cream and Parmesan cheese until creamy.
- Return the chicken to the pan, mixing until coated in sauce.
- Garnish with chopped parsley before serving.
Notes
Prep chicken and garlic a day ahead for a quick weeknight meal. Can be customized with seasonal vegetables.
