- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400°F (200°C) if using the oven method or prepare a large skillet over medium heat.
- Prepare the Kielbasa: Slice the kielbasa into bite-sized coins.
- Chop the Veggies: Dice the bell peppers, cut the baby carrots in half if larger, and chop the baby potatoes into halves or quarters.
- Create the Honey Garlic Sauce: In a small bowl, whisk together honey, minced garlic, and soy sauce.
- Combine: In your preheated skillet, add olive oil, followed by the sliced kielbasa and all the veggies. Drizzle the honey-garlic mixture over the top.
- Cook: Sauté for about 5-7 minutes or roast in the oven for 20-25 minutes, until everything is tender and caramelized.
- Garnish: Just before serving, sprinkle with fresh parsley or green onions.
