- 1 lb Chicken, diced
- 1 tbsp Cajun Seasoning
- 1 tsp Smoked Paprika
- 1/4 tsp Red Pepper Flakes (optional)
- 2 tbsp Olive Oil
- 2 tbsp Butter
- 1 medium Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Orzo Pasta
- 2 cups Low-Sodium Chicken Broth
- 1 cup Heavy Cream
- 1 cup Parmesan Cheese, freshly grated
- 1 tbsp Fresh Parsley, chopped
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced chicken, Cajun seasoning, smoked paprika, and red pepper flakes, cooking until golden brown (5-7 minutes). Remove chicken and set aside.
- In the same skillet, melt the butter. Add the chopped onions and cook until translucent (3-4 minutes). Add minced garlic and stir until fragrant (30 seconds).
- Add the orzo to the skillet, stirring to coat with the onion and garlic mixture.
- Gradually add chicken broth, bringing to a gentle boil. Reduce heat and simmer for 10-12 minutes until orzo is tender and absorbs most liquid, stirring occasionally.
- Stir in heavy cream and return the chicken to the skillet, adding Parmesan cheese until melted and creamy. Adjust seasonings as needed.
- Sprinkle with fresh parsley before serving.
Notes
For a creamier dish, add extra splash of cream or cheese. Consider pre-cooking chicken and veggies for easier preparation.
